A phenomenal heirloom from Alabama, this Lima bean only looks like a black-eyed pea, but it's full of Lima bean flavor so delicious this variety is often referred to as a "butterbean." A truly stupendous bean.

The Alabama Black Eye Lima Bean, scientifically known as Phaseolus lunatus, is a variety of lima bean that stands out for its distinctive appearance and culinary characteristics. This heirloom bean features a creamy texture and a rich, nutty flavor that sets it apart from other bean varieties.

The name "Black Eye" comes from the small black spot, resembling an eye, found on one side of the bean. This feature adds visual interest to dishes and makes the beans easily identifiable. Alabama Black Eye Lima Beans are typically medium to large in size and have a flat, oval shape.

In terms of culinary use, these beans are incredibly versatile and can be used in a variety of dishes. They are commonly used in soups, stews, salads, and casseroles, where they add both flavor and texture. Additionally, they can be mashed or pureed to create dips, spreads, or fillings for wraps and sandwiches.

Alabama Black Eye Lima Beans are not only valued for their delicious taste but also for their nutritional benefits. Like other beans, they are a good source of protein, fiber, vitamins, and minerals, making them a healthy addition to any diet.

Overall, the Alabama Black Eye Lima Bean is a beloved heirloom variety cherished for its unique appearance, flavor, and culinary versatility.
