Originating in South America, and known there as "pepa de zapallo" (which means "pumpkin seed"), tiger eye beans grow in a low bush and are very easy to grow. These are wonderful beans to use in cooking chili.

DAYS TO MATURITY: 55 days for snap bean, 80 days for dried bean

PLANT DESCRIPTION: (Phaseolus vulgaris) The plant features vibrant, elongated pods with a unique pattern resembling the eye of a tiger, hence its name. The pods typically measure about 5-6 inches in length and display a combination of yellow and purple hues. The plant itself is compact, reaching a height of around 18-24 inches, making it suitable for smaller gardens or container cultivation.

HISTORY: Originating from South America, and known as "Pepa de Zapallo," tiger eye beans grow in a low bush and are very easy to grow. These are wonderful beans to use in cooking chili. Harvest the beans when they are plump, and the pods are just starting to dry out. These beans can be shelled and cooked or completely dried.

NUTRITIONAL VALUE: These beans are a rich source of essential nutrients, including protein, fiber, and various vitamins and minerals. As a plant-based protein, they offer a healthy alternative for those seeking protein diversity in their diet. The beans are particularly high in folate, a crucial B-vitamin important for cell division and DNA synthesis. Additionally, they provide a good amount of iron, promoting optimal oxygen transport in the body. The fiber content in Tiger Eye Bush Beans supports digestive health and helps maintain steady blood sugar levels.

FOOD PREP: For a simple and flavorful preparation, consider sautéing the beans in olive oil with minced garlic and a pinch of salt. Alternatively, blanching the beans for a few minutes in boiling water and then shocking them in an ice bath helps retain their vibrant colors and crisp texture. Tiger Eye Bush Beans can also be added to stir-fries, salads, or casseroles for a delightful crunch. These beans are also a flavorful addition to chili and soup recipes.

GROWING TIPS: Annual. Before planting, soak the seeds in warm water for 24 hours. Plant the seeds 1-2 inches deep and space them 3-4 inches apart. Water the soil regularly and keep it moist.
