Red Bull Brussels Sprouts is an heirloom variety developed in England and popularized in Europe for its striking color and improved cold-hardiness. Unlike many traditional green Brussels sprouts, this variety is noted for its rich red-purple hue, which comes from elevated anthocyanin levels. Its development in the late 20th century was part of a wave of breeding focused on nutrient density and ornamental appeal, while still holding true to the heritage of Brussels sprouts, which have been cultivated around Brussels, Belgium since at least the 16th century.
Appearance and Characteristics
Plants are upright and strong-stemmed, reaching about 24–36 inches in height. The sprouts themselves are medium-sized, dense, and round, forming along the stalk in deep burgundy to purple shades that intensify in cooler weather. The leaves are tinged with red, adding ornamental value in the garden. The sprouts maintain firmness and a mild, nutty-sweet flavor even after cooking, making them both visually appealing and flavorful.
Culinary Uses
Red Bull sprouts are prized for their beautiful color, which holds well after steaming, roasting, or sautéing, adding visual contrast to dishes. Growing Tips

Sow seeds ¼–½ inch deep in seed trays or directly in well-drained soil if conditions are suitable. Space plants 18–24 inches apart in rows 24–36 inches apart. Harvesting Guidance
Red Bull Brussels Sprouts require a long season—about 120–150 days to maturity. Begin harvesting from the bottom of the stalk upward once sprouts are 1–2 inches in diameter and firm to the touch. For a sweeter flavor and stronger color, harvest after light frosts. Sprouts can be picked individually or by cutting down the entire stalk. With regular picking, the plant continues to produce usable sprouts over several weeks.
