Caribbean Flint corn is a type of maize known for its hard, flinty kernels. Caribbean Flint corn is primarily grown in tropical regions, yet this variety grew well in Wisconsin, as well as the mid-Atlantic region.
Early Caribbean makes a nice cornmeal for baking, polenta or hominy comes out dense and chewy. Vigorous, relatively tall and early to harvest. Its dense kernels are often ground into cornmeal or used in the preparation of dishes like arepas, tortillas, and tamales.
