Mild and with slightly sweeter flavor than many red radishes, this versatile vegetable is used both raw in salads, cooked and as a microgreen. It originates from ancient China and is a staple in many Asian cuisines. Daikon is also used a cover crop called “tillage radish” due to its long taproots and ability to reduce compaction by allowing water and nutrients to reach deep into the soil while creating healthy biomass for the future. Growing Guidelines for Daikon Radish:
Daikon, like most radishes, thrive in cool weather. Plant in early spring or fall. Sow seeds, 3/4" apart, 1/2" deep in rows 8-12" apart and thin to 1-1/2". If using as a cover crop, broadcast seeds at a depth of 1/4 to 1/2 inch and ensuring the sees are evenly distributed. Maintain adequate soil moisture. Daikon radish germinates quickly, usually within 3-5 days if soil conditions are optimal (moist and warm). The radish grows rapidly, with the taproot potentially reaching depths of 1-2 feet or more.
