The Red Savonese Onion is a distinct heirloom variety from the Savona region in Italy, prized for its exceptional sweetness and vibrant color. Frequently used in traditional Italian dishes, raw in salads, or as a topping for bruschetta. Its sweetness makes it suitable for pickling or making onion jam. Adds a vibrant pop of color and mild heat to any dish.
Appearance: Typically flat or slightly round with a squat profile. Deep purplish-red skin with subtle white streaks beneath. Medium-sized, ideal for both culinary and ornamental use.
Flavor: Known for its mild and sweet flavor, making it excellent for raw applications like salads and garnishes. The sweetness intensifies when cooked, making it versatile for sautés, soups, and caramelization.

We're excited about this lovely onion from the western Ligurian city of Savona (at the western end of the Italian Riviera). We got these seeds from the great Wild Garden Seeds in Oregon, who say this about it: "Italian red salad onions with fine growth rings that create delicate slices for topping summer salads. Mild sweet flavor, beautiful lavender color inside. These will reach 3" diameter for storage, but I prefer them when we can get 2" bulbs by closer spacing. I love these on tomatoes with balsamic vinegar and olive oil."
